Fettuccine with Roasted Tomato & Olives

There’s something magical about the way roasted tomatoes turn sweet and jammy in the oven. This fettuccine with roasted tomato and olives is a simple yet sophisticated Mediterranean-inspired dish—perfect for long lunches or cosy dinners. Ingredients (serves 4)

  • 400g fettuccine (fresh or dried)
  • 500g cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, finely sliced
  • 1 tsp sea salt flakes
  • Freshly ground black pepper
  • ½ tsp dried oregano (or 1 tsp fresh)
  • 1 cup Kalamata olives, pitted
  • ½ cup fresh basil or parsley leaves
  • Freshly grated Parmesan (optional)

Method

  1. Roast the tomatoes – Preheat oven to 180°C. Place tomatoes cut side up on a baking tray lined with baking paper. Drizzle with 2 tbsp olive oil, scatter over garlic, oregano, salt, and pepper. Roast for 25–30 minutes until softened and lightly caramelised.
  2. Cook the pasta – While tomatoes roast, cook fettuccine in a large pot of salted boiling water until al dente. Reserve ½ cup cooking water, then drain.
  3. Combine – In a large bowl or pan, toss hot pasta with roasted tomatoes, olives, and remaining olive oil. Add a splash of reserved cooking water to create a silky sauce that clings to the pasta.
  4. Serve – Scatter over basil or parsley leaves and Parmesan (if using). Serve immediately with crusty bread and a green salad.
